Long-term care residents consistently rate cleanliness of tableware as as important as food quality and taste, according to an article on the McKnights website.

Having a well-trained dishwasher, a properly balanced dishmachine and a good cleaning program ensures you meet your residents', families' and future residents' expectations for a clean and safe environment, the article said.

Key steps in dishwashing include sorting, scraping and emptying, presoaking, loading, pre-rinsing, washing, drying and protecting.

Staff should be trained to carefully examine all tableware items before setting a table or serving food, being careful not to touch the inside of glasses or the eating ends of flatware.
